The second recipe in the Basically Guide to Better Baking is an Earl Grey Yogurt Cake. Continuing my quest to become a better baker, I got out my baking supplies and ingredients to make this yummy looking cake.
Some thoughts on this recipe:
- I thought the cake could have been a little moister. However, it’s possible that is my fault. When I was adding the ingredients, I was not paying attention and I added the first egg to the flour mixture instead of whisking it into the sugar. I looked at it and thought, “That’s not right,” so I scooped the egg out and plopped it in the correct bowl. I may have not got all the egg white out – when I was whisking the eggs and sugar together, they kind of just clumped together and did not become frothy like the recipe indicated.
- The cake was also a bit dense. I wish it were a bit lighter.
- The recipe calls for either 3 tablespoons loose-leaf tea or 1/4 cup tea from bags. I ended up using bagged tea because it was easier for me to find. I only had 6 teabags though which I thought would be enough. Nope. When I emptied the bags into my measuring cup, there was less than 1/4 cup but I didn’t have time to go out and get any more.
- I’ve never drunk earl grey tea so I don’t know how much this cake tastes like the tea. Again, I probably did not have enough tea in the batter so it likely tastes a bit different when you have the correct amounts.
- I used a 9×5 pan like the recipe instructed. I did not realize it, but that is a really large loaf. If I were to make this again, I would probably use 2 loaf pans to make 2 smaller loaves.
- I did get to use my kosher salt that I purchased for the previous recipe so I was happy about that.
Final thoughts:
Would I make this earl grey tea cake again? If it was just for myself, I probably wouldn’t bake it again. It was good, but I didn’t enjoy it enough to make the huge loaf again. I might make the cake for a party or for a book club or a get together with other people though.
