It’s Thanksgiving today in the U.S. I had the day off work so I slept in a bit, watched the National Dog Show, and had some delicious food.
I started the day off with a long walk around Green Lake with my friend Alli. We had signed up for a virtual turkey trot so we met up this morning and got our miles in. We had a lot of fun chatting while dodging all the people running around the lake. After that, I came home and proceeded to make an apple pie. I had made the crust last night and I wasn’t sure how it would turn out since the crust was a little crumbly but I think it came out okay! I could smell the apples and cinnamon as it was baking and it smelled so good!
I am not a huge fan of turkey. I mean, I love eating a turkey sandwich but there is something about turkey that on its own, is not my favorite. Maybe because it always seems a little dry? Therefore I decided just to make a bunch of side dishes today to eat for my own Thanksgiving meal. My favorite side dishes are:
Potatoes – I love all kinds of potatoes – mashed potatoes, roasted potatoes, scalloped potatoes, french fries. Okay, french fries are not exactly a Thanksgiving side dish but they are a potato. I made some roasted fingerling potatoes and they were delicious. I just slice up the potatoes in half, toss them with some olive oil and salt and pepper, and then roast them in the oven.
Corn – I also love corn. It’s one of my preferred vegetables. A lot of times I just heat up some corn and eat it by itself.
Biscuits – Biscuits, bread, rolls – I like them all. Bread might be my favorite carb. It’s a toss-up between bread and potatoes (see above) but you can’t go wrong with some basic bread and butter. I mixed up some biscuits to eat with my sides and they were great.
Deviled eggs – I don’t know if everyone calls them this but they are hardboiled eggs where you cut the eggs in half and take the yolk out and mix it up with some mustard and mayonnaise and then put the yolk back in and eat. I actually make these all the time when I am looking for a quick and protein-rich snack.
Stuffing – I didn’t make stuffing this year but it is one of my favorite Thanksgiving side dishes, probably because it contains bread haha!
And then for dessert is, of course, my apple pie. I haven’t eaten it yet because I am so full of all the other food I’ve eaten today. But that’s okay because apple pie is always better after it sits for a while.
The other thing I love to do on Thanksgiving is watch the National Dog Show. Whoever came up with the idea to show the dog show on Thanksgiving is genius! I love watching all those dogs as they pose and prance around the ring. I am not into sports so the dog show is about as sporty as I get.
