April was a bit of a wash. My job has been super busy, so I’ve been spending a lot of time working. Most of the time when I get home from work, I just want to eat dinner and relax on the couch. Weekends are for catching up on errands and cleaning. I’ve also been scrolling a lot on my phone because I don’t want to think or use my brain. I think I only read 1 book in April.
Here is my monthly wrap-up of some of the other things I was up to in April.
What I’m watching:
I did manage to watch The Bondsman on Amazon Prime. It’s a fairly new show with Kevin Bacon where he is a demon bounty hunter. The best part about this show is that the episodes are only 30 minutes, so they are super quick to watch. I think I binged all 8 episodes in a couple of days. It was an entertaining watch to have on the background while I was doing other things around my apartment.
What I’m eating:
April was National Grilled Cheese Month. I had a plan to make a bunch of grilled cheese and post about it here. I even went to the library and checked out a grilled cheese recipe book. But then I only ended up making 2 grilled cheeses. Part of the reason was that I had to go out and get the ingredients for each sandwich – I really only keep cheddar and mozzarella cheese in my fridge so I had to go out and buy all the other cheeses mentioned in these recipes as well as other fillings. The 2 sandwiches I made were pretty good, but I still love just a regular grilled cheese made with some type of white bread and cheddar cheese.
I also made the Lemon Pepper Chicken and pasta again that I made last month. I kind of modified it and didn’t add all the ingredients listed in the recipe. I also just made my own pasta. It was still really good and I think it will be a recipe I make again and again.
What I’m loving:
Now that the weather is getting nicer, I’ve been getting back into my workout routines. I’ve been going to the gym in the morning (that’s a whole other story about my apartment building) and I’ve gotten back into going on walks on the weekend. I’ve been on a couple of 5-mile plus walks and I am loving it. I love getting out in the morning when it’s crisp and cool, getting all my steps in, grabbing a coffee to drink on the way home, and getting home when people are just getting started on their weekend. I feel so accomplished. Plus, I can take all the photos of flowers I want!
